Day #18

Lemon Pepper Tilapia and Harvest Soup -

I took some of the leftover Squash/Sweet Potato/Pear sautee from the other night, mixed in some milk, and blended it together.  Heated it up, and voila!  A simple "stoup" as Rachael Ray would call it - thinner than a stew but thicker than a soup.  (Some of the potato and pear refused to mash, no matter how much I heated or cooked them...so they stayed chunky).
Sauteed a tilapia filet with some olive oil and lemon pepper seasoning, and served that along side the the stoup.
