Day #68



Tilapia with mashed sweet potatoes...

I peeled & chopped a sweet potato into chunks, then cooked it in my microwave steamer for about 8 minutes until fork tender.  I then added a tiny bit of butter and a splash of milk, and mashed until fairly smooth.

At the same time, I heated up a small skillet on the stove with a little pepper olive oil.   To the skillet, I sauteed a tilapia filet and some frozen stir fry veggies.  I seasoned that mixture with salt, pepper, and lemon pepper spice. 

It all came together quickly and easily....which is great on a Friday evening!
