Day #87 - Beef Barley Soup


It's been a while since I've had one of my infamous "turn leftovers into soup" posts.   So that is exactly what you get tonight.    I made beef barley soup using last night's leftovers.

I started by bringing a couple cups of beef broth to a boil in a small pot.  I added some diced carrots, celery, and onion, and let the vegetables simmer and soften.  Then I stirred in a cup of last night's leftover barley risotto, added some pepper & dried herbs to taste, and let it all simmer for about 10 minutes.

Quick & easy!    And it made for a delicious, fragrant soup too - especially those mushrooms which absorbed the wine last night.  Delicious!!   (I actually think I enjoyed the soup more than the risotto...)
