Day #108 - Orange Pork Tenderloin French Dips


Trying a recipe from the newest edition of Rachael Ray Magazine - Pork Tenderloin French Dip Subs.    It was a pretty easy recipe to follow!   Season a pork tenderloin with salt & pepper, and put that in the oven to roast.    The au jus was made by boiling together chicken stock, orange slices, carrot, shallots, garlic, honey, peppercorns, and bay leaves.   Also on the sandwich was a gremolata of orange zest, thyme, rosemary, and parsley.  It added a nice flavor to the sandwich.

Along with my sandwich, I had some crunchy potato chips, some tropical fruit salad, and a Snapple iced tea :)
