Day #94 - Italian Sausage Soup


Made up a quick batch of soup tonight for dinner.  Browned up some mild Italian sausage, onions, peppers, and diced asparagus.  Dumped that mixture into a pot with about a half box of vegetable stock.  Added in a small can of diced Italian tomatoes, a handful of quick-cooking barley, and seasoned with salt, pepper, and Italian herb mix.   Brought the mixture to a boil, then covered, reduced the heat, and let simmer for about 10 minutes (until the barley was plump and soft).   Served up my bowl full with some grated Parmesean cheese and another dash of Italian herbs.
