Day #232 - Chicken and Parmesean Couscous

I have lots of leftovers accumulating in my fridge, so it's time for me to start finding ways to use them before I cook anything new.   For dinner this evening, I took some of the leftover garlic couscous and mixed in a generous amount of grated Parmesean cheese and dried Italian herbs.  I shredded one of the poached chicken breasts, added it to the couscous, and reheated the whole plate in the microwave.
