Day #257 - Chili Salad

Tonight I made a "Taco" Salad using some of my leftover chili.  I started with a large plate of chopped romaine lettuce, added some diced bell pepper, a large scoop of reheated chili, some halved cherry tomatoes, a couple spoonfuls of tomato-cilantro salsa, and a generous serving of shredded Mexican-blend cheese.

This was also a special occasion.  Tonight I reached the point in my new diet where I could start adding fruit back into my daily food intake.  Two weeks without fruit is difficult!!   To celebrate, I made a small dessert parfait with layered strawberry slices, low-fat ricotta cheese, dark chocolate chips, and chopped pecans.  Delicious!
