Day #260 - Chicken Stir Fry

Tonight I cooked some chicken stir fry for dinner.

I cut red bell pepper, snap peas, and chicken into large chunks, and cooked them in a some olive oil.   For the sauce, I mixed together some red pepper hummus, chicken broth, and low-sodium soy sauce.   Once the chicken was fully cooked, I added the sauce to the skillet, and simmered until the sauce was thickened.   I served my stir fry over a bed of cooked quinoa.
