Day #282 - Baked Mahi-Mahi

Tonight I purchased some frozen Mahi Mahi fillets from the grocery store.  By the time I walked home from the store, they were partially thawed, so I figured I would go ahead and cook them for dinner.

I seasoned both sides of the fillets with salt, pepper, and a little Island Spice Blend, and then placed them on my stone baking pan.   I also chopped up some vegetables (red onion, asparagus, broccoli, and butternut squash), tossed them with a little olive oil, and put them on the same baking pan.  I baked everything for 20-minutes at 350 degrees, until the fish was flaky and the vegetables were tender.
