Day #288 - Veggie Sautee

Tonight I wanted to load up on my vegetables.  I heated a little olive oil in a large skillet, and sauteed some cubed butternut squash, sliced butternut squash, asparagus, and frozen green peas.  I seasoned the vegetables with a little salt, black pepper, and Italian herbs, and served it over a bed of whole grain quinoa.  I guess it would be an Italian vegetarian version of stir fry.   A nice, warm, hearty meal using seasonal vegetables.
