Day #331 - Blue Turkey Salad with Quinoa

Tonight I wasn't in the mood to cook a big heavy meal.   So I threw together this delicious salad using some of the leftovers from my fridge -  baby spinach, romaine lettuce, leftover cooked quinoa, diced pear, leftover Thanksgiving turkey, blue cheese, dried cranberries, chopped walnuts, and a vinaigrette dressing made from red wine vinegar, Dijon mustard, and extra virgin olive oil.  It hit the spot tonight.
