Chicken, cheese & rice. I took a chicken breast and cut it horizontally across the breast, butterflying it so I had 2 thin halves. I seasoned it with salt, pepper, and Italian seasoning, then cooked it in a skillet with a little olive oil, until the chicken had a nice brown sear on the outside and the chicken was cooked through. (It cooked much faster since it was so thin.) I served the chicken on a bed of leftover cheddar rice, and topped it with a little Gorgonzola cheese and some more dried Italian seasoning mix.
