Day #337 - Non-Traditional Caesar Salad
We had a large carb-heavy lunch at the office today, and I over-indulged in potato chips. So I wanted something lighter for dinner. Using the ingredients I had on hand, I pulled together this salad, which I call my non-traditional Caesar Salad.
The only parts of this salad that would be found in a traditional Caesar salad are the romaine lettuce and the Caesar dressing. Everything else are very non-traditional ingredients - diced green bell pepper, diced baby portabella mushrooms, Gorgonzola cheese, and salted peanuts (in place of croutons). But surprisingly, the combination of ingredients worked!
