This is one of my go-to soup recipes. It's quick, easy, and hearty. It's a corn chowder soup recipe that I learned from a scrapbooking acquaintance, Ro Paxman.
In a soup pot, I sauteed 1 package of diced ham and a bunch of sliced green onions. I added a can of golden corn kernels (drained), 1 can of creamed corn, 1 sweet potato (steamed & mashed), and 1 cup of milk. Seasoned with salt & pepper, and let simmer together until fully heated.
And that's all it takes to make a delicious bowl of corn chowder!
