Days #171 & 172 - Picnic and Quinoa Salad
Yesterday (Wednesday June 22nd) was the first Wednesday night performance of the Muny Opera's summer season. The Muny is an outdoor, open-air theater here in St. Louis. Each summer they put on seven musicals, one week per show. In celebration of the opening show (which was Legally Blonde), we had a Girls Only picnic in the park before the show: me, my mom, grandma, two aunts, and two cousins. Picnic dinner consisted of hot sandwiches on hoagie rolls, fruit salad, pretzel bites, and a cookie bar for dessert.
Sorry for not posting this last night, but I didn't get home from the show until 11:30pm, and didn't get around to posting until tonight.
Tonight I prepared a quick and light dinner. I took some precooked quinoa, and tossed it with chopped romaine lettuce, tomato, onion, Kalamata olives, and a red wine vinaigrette. A handful of Saltine crackers on the side to add some crunch, as well as help scoop up the salad and soak up the dressing.
